What to eat for breakfast when pregnant and gluten-free

I’m always looking for a variety of healthy and easy options for breakfast. Eggs certainly rank at the top of the list for healthy, but aside from hard-boiled eggs they take more time and energy than I want to spend when I’m starving. A couple of great choices are low-fat yogurt and delicious seasonal berries with a little honey, GlutenFreeda oatmeal and a side of fruit salad made in advance, or Udi’s toast with smoked salmon, cream cheese, tomatoes and capers. As most pregnant women have read eating smoked salmon, deli meats, hot dogs etc., that are not piping hot, increases your chance of getting infected with Listeria. Yes, this is true. However if you buy the salmon in a sealed package, and only eat it on the day it is opened you will be fine. Many of you will feel uncomfortable doing so, and I understand. This is just something I enjoy that is a great gluten-free and healthy option. For those of you who aren’t pregnant, enjoy!

Now try to tell me that these breakfast options don’t look fabulous.
